Development : Hand-cutting of canes, pressing and start of SPONTANEOUS fermentation during the day. Very long fermentation of 10 to 12 days.
Distillation in a copper pot still in 2 passes in a bain-marie. High proof, offering the purest expression of 100% natural Khmer sugarcane. Leave to rest for several weeks before reduction and bottling at the distillery
